Asian Style Beef and Broccolini Bowl

This stir-fry is quick, full of flavour, and made with pantry staples. Feel free to customise with whatever veggies you’ve got in the fridge. Oyster sauce gives it a savoury depth, but hoisin works beautifully too. Leftovers? Even better the next day.

Ingredients
Base:
500g extra lean beef mince
1 tbsp extra virgin olive oil (chilli oil optional)
3 garlic cloves (or 1 tbsp minced garlic)
2 bunches broccolini (or 400g broccoli), chopped
2 spring onions, finely sliced
Stir-fry Sauce:
⅓ cup oyster sauce
1 tbsp soy sauce
2 tsp sesame oil
2 heaped tsp brown sugar or honey
2 heaped tsp cornflour
¼ cup beef or chicken stock (or water)
To Serve:
Cooked rice (microwave rice is perfect here)
Shredded carrot or coleslaw mix
Roasted cashews or crispy noodles
Method
01.
Roughly chop broccolini. Slice spring onion and mince garlic

Heat olive oil in a large frypan over high heat

Add garlic and cook for 30 seconds, then add broccolini. Stir-fry for 3 minutes. Remove and set aside

Add a little more oil and brown the beef mince for ~5 minutes, breaking up lumps with a spoon

Whisk all sauce ingredients together in a jug

Pour sauce over beef, add spring onions, and cook for 1–2 minutes until thickened

Return broccolini to the pan, stir through, and heat until warmed
08.
Serve with rice, shredded carrot or slaw, and top with cashews or crispy noodles
