Easy Slow Cooker Massaman Curry

Ingredients

  • 1 large onion

  • 3 carrots

  • 500g baby potatoes

  • 1kg chuck steak or slow-cook beef

  • 1 tbsp olive oil

  • ⅓–½ cup Massaman curry paste

  • 270ml coconut milk

  • 100g baby spinach

  • Salt and pepper

To Serve:

  • Steamed rice or cauliflower rice

  • Chopped peanuts (optional)

  • Chilli flakes or fresh chilli (optional)

  • Spring onions

  • Roti or naan (optional)

Method

01.

Slice onion. Cut carrots lengthwise, then into chunks. Quarter baby potatoes.

02.

Season beef with salt and pepper.

03.

If using a browning function or frypan, heat olive oil and brown meat on all sides.

04.

Layer beef, onion, carrot, and potatoes into the slow cooker.

05.

In a bowl, whisk curry paste and coconut milk until smooth. Season.

06.

Pour curry mixture over meat and vegetables.

07.

Cover and cook:

  • High: 3.5 hours

  • Low: 7 hours

08.

Add baby spinach in the final 10 mins to wilt.

09.

Serve with rice, roti, and top with peanuts, chilli, and spring onions if desired.
