One Pan Chicken Caprese
Monday night meals that are fast and flavourful will always have a special place in Liz’s heart — and her kitchen. This one ticks every box: easy, minimal clean-up, and built around quality ingredients like @muttipomodoroau’s Sugo Semplice Basil Pasta Sauce and cherry tomatoes.
Perfect with crusty bread to soak up that beautiful sauce — or served over pasta for something more filling.

Ingredients
800g skinless chicken breast or tenderloins
Extra virgin olive oil
Dried mixed herbs
Sprinkle of paprika
Salt and pepper
100g baby spinach
400ml Mutti Sugo Semplice Basil sauce
400ml Mutti Cherry Tomatoes
2 tbsp basil pesto
125g mozzarella (torn buffalo mozzarella + grated mozzarella mix)
Fresh basil leaves, to serve
Crusty bread or cooked pasta, to serve
Method
01.
Season chicken with olive oil, dried herbs, paprika, salt and pepper. (Add chilli flakes if desired.)

Heat a large oven-safe frypan on medium-high.

Cook chicken on each side for ~4 minutes or until cooked through. (See notes below.) Remove and set aside.

Add spinach to the same pan and sauté until just wilted.
05.
Pour in Mutti Sugo and Cherry Tomatoes. Simmer for 2 minutes.
06.
Return the chicken to the pan and nestle into the sauce.
07.
Dollop basil pesto across the top and scatter mozzarella.
08.
Place under the grill for 2–4 minutes until cheese is golden and bubbling.
09.
Serve with fresh basil and plenty of crusty bread or your favourite pasta.

Notes & Tips
Tenderloins cook quicker; if using thick chicken breasts, slice or flatten to ensure even cooking.
Tinned cherry tomatoes are a perfect pantry staple — no need for fresh.
Leftovers? Spoon into a wrap or sandwich the next day.
