One Pan Tuscan Chicken Pearl Couscous
A true throw-together dinner that’s big on flavour and low on fuss. Everything bakes together in one dish — the pearl couscous absorbs a rich tomato stock while the chicken stays tender and juicy. The @mingleseasoning Creamy Dreamy Tuscan Chicken blend brings it all together with no added nasties.

Ingredients
700g skinless chicken thighs or tenderloins
Extra virgin olive oil
1 tbsp Creamy Dreamy Tuscan Chicken seasoning (@mingleseasoning)
250g pearl couscous
½ cup sun-dried tomatoes, drained and chopped
½ cup parsley or basil, sliced
200g zucchini, diced
60g baby spinach, chopped
600ml chicken stock (hot)
2 heaped tbsp tomato paste
1 tsp Creamy Dreamy Tuscan Chicken seasoning
1 tsp crushed garlic
Handful cherry tomatoes
Grated parmesan, to serve
Method
01.
Preheat oven to 200°C.

Cut chicken into 4cm chunks. Drizzle with olive oil and season with 1 tbsp Tuscan Chicken blend.

In a large oven-safe pan or baking dish, add pearl couscous, sun-dried tomatoes, zucchini, spinach, and herbs.

In a jug, mix hot chicken stock with tomato paste, garlic, and 1 tsp Tuscan seasoning. Stir well.
05.
Pour hot stock over couscous and mix to combine.

Arrange seasoned chicken and cherry tomatoes on top (don’t stir in).
07.
Cover with lid or tightly with foil. Bake for 15 minutes.
08.
Remove cover and bake for another 10–15 minutes until chicken is cooked and liquid is absorbed.
09.
Top with grated parmesan and fresh herbs to serve.

Use mushrooms or asparagus instead of zucchini
