Savoury Cottage Cheese Slice with Feta, Herbs & Olives
For all the savoury snack lovers — this is a one-bowl, mix-and-bake kind of recipe. High in protein thanks to the cottage cheese, it's packed with Mediterranean flavours and perfect for lunchboxes or meal prep. Freezer-friendly and endlessly customisable.

Ingredients
½ cup olives, chopped
½ cup sundried tomatoes, chopped
½ cup fresh herbs, finely chopped (parsley, mint, dill)
1 spring onion (or ½ small red onion), finely chopped
150g feta, crumbled
Wet Mix:
1 cup cottage cheese
⅔ cup milk
⅓ cup extra virgin olive oil
2 eggs
Dry Mix:
1½ cups self-raising flour
1 tsp baking powder
½ tsp salt
Cracked black pepper
Dried rosemary or Italian herbs (for topping)
Method
01.
Preheat oven to 180°C. Line a 20×28cm baking tin with paper.

In a large bowl, whisk together cottage cheese, milk, eggs, and olive oil until smooth.

Add flour, baking powder, salt and pepper. Stir until just combined.

Fold through chopped olives, sundried tomatoes, herbs, spring onion and most of the feta.
05.
Pour into prepared tin and smooth the top.
06.
Sprinkle with remaining feta and dried herbs.

Bake for 30–40 mins until golden and cooked through (a skewer should come out clean).
08.
Cool slightly before slicing into 12 bars.
